Thanks to the use of materials as raw as they are noble, earthenware, lighting fixtures, shapes and colors that refer to the marine world, architect Julie di Maria Coatanea has created a place that is both contemporary and warm, far removed from the clichés of restaurants offering seafood and caviar. Astara redefines the rules and aims to erase preconceived ideas about the consumption of this black gold.

In the kitchen, you'll find revisited seafood classics and dishes with flavors from elsewhere. Chef Arnaud Vachet, for example, imagines a ravioli stuffed with snow crab served in a dashi broth, yellow carrots and enoki, or roasted wild hake, parsnip purée, salsify, kale and pumpkin seeds.
